In the top bar click Mail → Settings…

Go to the Signatures tab

Click + and name the signature (e.g. "ČSOB documents")

Uncheck "Always match my default message font" — otherwise formatting will be lost

Open the right email variant above in Google Chrome (Safari and Firefox do not preserve the formatting correctly), select all (⌘A), copy (⌘C) and paste into the signature box (⌘V)
